A great crust recipe for one of the best italian pizza

Who doesn’t like a good pizza? I do for sure. I’m rather picky about the pizza I order and eat and honestly, it is rather hard to find a good pizza around Ramat Gan.

My brother and his family are the same and he just came across a fantastic dough recipe for a delicious home-made pizza. Before sharing it with you, keep in mind that a good pizza need a very high temperature to cook the dough asap and don’t over cook all the goodies you put on top of your pizza. So be sure your over go around 250-300 degrees (Celsius of course) and if you have a pizza stone, it will be even better. I will assume you have both for this recipe.

So here’s we go:

ingredients (for 4 individual pizzas)

  1. flour – 500 g
  2. warm (not hot) water – 375 ml
  3. yeast – 25 g
  4. sugar – 1 teaspoon
  5. olive oil – 2 tablespoon
  6. salt – teaspoon
  7. tomato sauce
  8. mozzarella
  9. emmental
  10. any other topping you like

preparation

  1. combine the yeasts into 125 ml of warm water and let sit for a few minutes
  2. in your mixer’s bowl, combine the flour, the sugar & the salt and mix a few moments
  3. pour in the 250 ml of water then the 125 ml of water containing the yeast
  4. knead (with your mixer or by hand) until you get a nice ball (around 3 minutes)
  5. let it rise for one hour
  6. knead again shortly (1 min, 1.5 min) and let it rise again for 30 minutes
  7. put your pizza’s stone in your oven and pre-warm it at its highest (I set mine at 275 degrees)
  8. after 30 minutes, split your dough into 4 equal portions
  9. Dust generously your surface with flour
  10. Roll out the first portion until you get a thin, rounded dough
  11. Pour half teaspoon of olive oil on top of your dough
  12. Dress your pizza the way you like in this order:
    1. tomato sauce
    2. cheeses
    3. toppings
  13. Bake your pizza in the oven for 4 minutes to 5 minutes

That’s it! Your first pizza is ready.
